Everything is in near-perfect harmony. Aged for over a year in Cabernet barrels from Calais Winery, which was located just two blocks from DEBC before Benjamin Calais moved his operation to the Hill Country. Our award winning Quad was allowed to mellow and mature, adding a touch of sophistication to our already awesome brew.
It’s really an exciting experiment. Using wine barrels to age beer in is a lot of fun. Something completely different for us. It was really neat to taste the beer as it aged. It changed drastically. At first, we noticed a lot of toasty flavors from the wood. As the beer matured, we started to get a touch of fruity acidity that wine brings. It became almost refreshing. These flavors married with the beer in such a beautiful way. We’re really excited to offer this special beer to the rabid masses.
Our Cabernet Barrel Aged Four Swords is sweet up front with a port like wine texture and flavor. Fruity esters are all over and wine flavors lingers long into the finish with a dry oakiness.
I would pair this beer with Cheese. Think a buttery Brie, Gouda, Havarti or Swiss. Or a sharp Blue Cheese or Cheddar. I would also suggest pairing it with TX BBQ. Brisket, or Carolina style pulled pork would be awesome! It would probably be able to tame some wild game as well. I enjoy it most after a great meal, surrounded by friends and lively conversation that is sure to follow!”
