Bio on Snout + Whiskey
Snout + Whiskey is the brainchild of Chef Shimond Bradley and business partner Rigo Bernal. They met while working together at Stonebridge Country Club and quickly figured out that they shared a dream of opening a restaurant someday. While they both have different specialties within the restaurant, their vision was the same and they have been working toward that goal ever since. Their first venture together brought DFW “The Crazy Pig” food truck featuring modern American food. In a mere six months they earned high praise and gained a large, loyal following all around the city. Now they are turning that success into a brick and mortar restaurant.
Snout + Whiskey
Snout + Whiskey will be more than just a restaurant, it will be the living definition of our lifelong dream. It will not only be a place where we cook and serve outstanding food and drinks, but also a place that stands as a fixture in the community and brings people together over a shared love of food and life.
We are building a restaurant for people like us who enjoy eating great food in a comfortable atmosphere. Therefore, we are keeping it small and cozy with just 40-50 seats and an open kitchen. A little edgy, artistic, and sometimes loud, when people walk through the door, they will know that they are getting a little piece of everything we are about.
For the location, we chose the Deep Ellum neighborhood with it’s rich history and vibrant personality. For many years it has been known as an eclectic area full of music, art and food where people can come to find new things. The area is currently undergoing a renaissance with many new and exciting places being opened. We are looking forward to being a part of that and showcasing our own individual style as well.
Our goal with the food is to create a unique, New American cuisine that anyone can enjoy while giving ourselves the freedom to create whatever we can imagine. The menu will feature fresh, seasonal, and locally sourced items prepared with a mix of classical and modern techniques that bring the two sides of the culinary world together in flavorful and creative dishes. We will serve lunch and dinner Tuesday through Saturday and brunch on Sundays.
The bar will showcase a variety of options designed to pair with the food including both local and non-local craft beers, and a substantial list of fine whiskeys, bourbons, and scotches. Using the same creative approach behind the bar that we do in our kitchen, we will blend techniques of old-school mixology with some modern molecular gastronomy to create our own infused liquors, house-made syrups, and specialty cocktails.
With over thirty years of combined experience, we will handle every aspect of the building of Snout + Whiskey ourselves so we know that we are creating a restaurant for people like us that love food. Our hope is that people will enjoy it as much as we do for years to come.
